Wine and Spirits Appreciation - FBM 344
This course is an introduction to
the origins of Wines and Spirits, from grapes
to other fruits and grains as raw material
from specific regions in the world, to their
transformation by different cultures and
civilizations. It focuses on the processes of
fermentation, maceration, blending, distillation
and aging, tasting and serving. Special attention
is given to the understanding of human senses
in the evaluation process objectively and
subjectively. The course alternates between
lectures and tasting sessions with sampling of
different beverages to assess quality versus
major defections due to storage, handling and
other parameters. Prerequisite: Junior Standing.
